Fill a shaker full of ice. Add sotol, cognac, lime juice, and simple syrup. Shake vigorously for about 10-15 seconds until hands get really cold from the shaker.
Salt the rim of a glass by rubbing the rim with a lime wedge. Invert the glass and rub the rim on a salted plate.
Pour margarita ingredients from the shaker into the glass. Garnish with a lime. Serve

Sotol distribution is growing, but still can be difficult to find in certain markets. Tequila and mezcal are fine substitutes in this recipe.There are lots good cognacs out there. I used Pierre Ferrand Ambre which I like a lot.When salting the rim, focus on the outside part of the rim. I prefer to only salt the outside to avoid salt falling into the drink. The salt can throw things out of balance flavor-wise if it’s mixed into the drink.Enjoy this delicious sotol margarita with brisket barria or Mexican street tacos.
