Fried Brown Rice With Peas and Collard Greens

Quick, easy, and flavorful fried brown rice enhanced with leftover smoked pulled pork, black-eyed peas, and collard greens.

Ingredients

  • 9 oz Brown Rice Microwave
  • 1 medium Yellow Onion diced
  • 1 Bell Pepper diced
  • 3 Garlic Cloves diced
  • 2 Collard Green leaves finely chopped
  • 14 oz can Black-eyed Peas
  • 1 pound Smoked Pulled Pork
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • ½ teaspoon Allspice
  • 1 teaspoon Paprika
  • 2 tablespoon Olive Oil
  • ¼ cup Cider Vinegar
  • 2 tablespoon Worcestershire Sauce

Instructions

  • Mix spices together in a small bowl.
  • Heat pan on medium heat. Add olive oil and then sauce pulled pork to allow the flavor to release. Stir as needed cooking for 3-4 minutes. Remove and set aside.
  • Add onions and saute 2 minutes. Add in garlic, peppers, and a third of the spice mix. Oil should be infused with flavor at this point.
  • Mix in the collard greens adding more oil if needed. Add another ⅓ of the seasoning and cook another 3-4 minutes.
  • Add drained peas cooking for 2 minutes mixing well. Add the meat back plus the rice plus the remaining spices. Mix all together and then let sit undisturbed 2 minutes for that crust to form.
  • Add vinegar and Worcestershire sauce. Mix in and then remove from heat. Enjoy.
