Easy Refreshing Cherry Tomato Salad with Whipped Feta Spread

This easy recipe for a refreshing cherry tomato salad is perfect for summer! Featuring fresh peaches and a whipped feta spread, it's a delicious dish that's sure to please.

Ingredients

For the Salad:

  • ½ lb Cherry tomatoes halved
  • 1 medium Peach pitted and sliced
  • 1 medium Avocado pitted and sliced
  • ¼ lb Shishito Peppers sliced thinly
  • ¼ cup Chimichurri sauce - Any preferred green salsa or pesto will do.

For The Whipped Feta

  • 8 oz Feta cheese
  • ¼ cup Greek Yogurt
  • 4 cloves Garlic minced
  • ¼ cup fresh Lemon juice
  • 2 tablespoon Olive Oil

How To Make A Cherry Tomatoes Salad (Step by Step)

  • This Cherry tomato salad recipe comes together rather easily. It's merely an assembly job for the most part, but you will have to mix the whipped feta spread.

Step 1 Chop the Vegetables

  • Halve the cherry tomatoes and set aside. Slice the peach in half. Remove the pit then slice each half into quarter slices.
  • For the avocado cut it in half. Remove the pit then scoop out the flesh with a spoon. Cut each half into quarters then dice them into chunks.
  • Cut the peppers into thin round slices.
  • Set all the vegetables aside in a large mixing bowl.

Step 2 Make the Whipped Feta

  • Add the feta cheese and greek yogurt to high-sided bowl or large jar with a wide top. Add in the lemon juice plus the minced garlic.
  • Using an immersion blender puree to a thick creamy consistency. Add olive oil and blend just a bit more. Alternatively, you can also use a food processor. Add a pinch of salt and pepper for additional seasoning.

Step 3 Assemble the Salad

  • Spread the whipped feta in the bottom of a bowl. Layer the cherry tomato salad onto of the spread. Top the salad with the chimichurri sauce.
  • Alternatively you can gently toss the tomato mixture with the sauce separately and then add the salad to the bowl of whipped feta. Garnish with fresh basil or a combination of fresh herbs like fresh parsley or fresh oregano.

Notes

Cherry tomatoes are the perfect addition to this salad because they are sweet, juicy, and full of flavor. If you prefer grape tomatoes then go for it!
Though this is a cherry tomato salad you can easily convert this to a slightly more heartier tomato salad by using sliced full-sized tomatoes, preferably heirloom to level up!
Peaches add a lovely sweetness and a bit of crunchy texture, while the feta provides a nice salty contrast. Nectarines work equally well in this tomato salad.
Shishito peppers give it a little bit of heat but don't be alarmed as it's a mild heat at worst.
If you're not a fan of feta, goat cheese would be a delicious alternative.
The chimichurri add really good flavor and keeps this salad fresh and fabulous. However, it can be replaced with a simple vinaigrette, salsa verde, your favorite dressing (balsamic vinaigrette) or simply omitted altogether.
This salad is best served cold or at room temperature, so make sure to give it plenty of time to chill in the fridge before serving if you're going with the cold route.
Add more traditional tomato salad ingredients like fresh mozzarella and/or sliced red onion.
Opt for fresh ingredients in this recipe. This makes for the best tomato salad that you'll absolutely love!
For next level flavor add a light drizzle of balsamic glaze on top. Glazes are easy to make. You can simply cook balsamic vinegar down in a saucepan to concentrate the sweetness.
Serve this fresh tomato salad as a side dish accompaniment to main dishes like fried pork steaks, beef suya skewers, or black eyed pea falafel.
