Turnip Greens Tabbouleh

Quinoa Tabbouleh

  • 1/2 cup quinoa
  • 2 cups water
  • 3 tablespoons olive oil
  • 1 bunch turnip greens finely chopped
  • 2 cups finely chopped fresh flat-leaf parsley from 3 bunches
  • 1/4 cup finely chopped fresh mint
  • 8-10 cherry tomatoes halved
  • 1/2 seedless cucumber* peeled, cored, and cut into 1/4-inch pieces
  • 3 tablespoons fresh lemon juice
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper


  1. Pour the quinoa into a fine mesh colander and rinse under running water for at least 30 seconds. Drain well.
  2. Combine the rinsed quinoa and water in a saucepan. Bring the mixture to a boil over medium-high heat, then decrease the heat, cover, and simmer.
  3. Cook until the quinoa has absorbed all of the water, about 10 to 20 minutes.
  4. Remove the pot and let the quinoa steam for 5 minutes. This step gives the quinoa time to pop open into little curlicues, so it’s nice and fluffy.
  5. Remove the lid and fluff the quinoa with a fork.
  6. Transfer quinoa to a bowl and toss with remaining ingredients until combined well.
