Heirloom Tomato Galette w/ Feta and Fresh Herbs

Delicious tomato galette recipe featuring summer ripe heirloom tomatoes with fresh feta cheese and herbs. Puff pastry is used for convenient and easy crust.

  • Salt and ground black pepper to taste
  • 1/2 cup grated Parmesan cheese or more to taste
  • 1/2 cup panko bread crumbs

  • 1 tablespoon fresh thyme
  • 1/2 cup crumbled feta cheese
  • 1 pound tomatoes sliced into 1/4-inch rounds

1/2 cup crumbled feta cheese
  • 1 sheet frozen puff pastry
  • 1 tablespoon fresh basil
  • 1 medium 
egg beaten


  • Preheat your oven to 400°F.
  • In a bowl, combine grated Parmesan, bread crumbs, salt, pepper, and thyme.
  • Line a baking sheet with parchment paper and layer on the puff pastry.
  • Sprinkle the cheese mixture evenly on top leaving about an inch and a half of the edge uncovered.
  • Layer on the feta cheese
  • Starting at the center, place the tomato slices in circles overlapping each other.
  • Fold the leftover dough over the tomatoes. Brush the folded dough with the beaten egg and bake for about 30-40 minutes or until the dough is cooked through and golden brown.
  • Allow the galette to cool (5 minutes) and top with fresh basil. Serve.


Sprinkle some of the cheese mixture on top of the tomatoes before cooking as well for additional flavor.
