Broiled Jerk Salmon

Quick, easy, and delicious recipe for glazed jerk salmon. Fresh salmon is topped with a jerk based glaze then quickly pan-fried and broiled to perfect temperature for simple weeknight gourmet dish.

Ingredients

  • 1.5 lbs Fresh Salmon
  • 2 tablespoon Jerk Marinade
  • 1 Lime Juiced
  • 2 teaspoon Maple Syrup
  • 2 Garlic Cloves minced
  • ½ tablespoon Olive Oil
  • ½ tablespoon Clarified butter ghee

Instructions

  • Mix the jerk marinade, lime juice, maple, and garlic in a bowl. Set aside.
  • Season salmon with salt and pepper
  • Preheat cast iron skillet in oven at 450 on high rack for 10 minutes.
  • Remove the skillet to the stovetop. Heat burner to medium-high heat. Add ghee and once melted add the salmon and fry for 5 minutes.
  • Using a towel or glover move the skillet back to the oven and broil for 3 minutes. Remove the fish and brush it all over generously with the glaze.
  • Finish in the oven for another minute. Remove and rest for 3-4 minutes.

Notes

Buy the freshest fish you can afford. Quality matters and is key to making this dish gourmet level.
Honey or even brown sugar is a fine substitute to maple syrup. The key is you want a good sweetener to get great caramelization from the glazing.
This recipe also works with trout, particularly steelhead.
If you don’t want to make your own marinade, use a quality store-bought paste like a Walkerswood or Grace branded one.
Cast iron is perfect for this, but if you don’t have one, make sure your pan is oven-proof.
