Holiday side dish or just simply a quick and easy weeknight side, these instant pot carrots are your ticket! Quickly cooked and glazed with cajun butter mix.
Add water to the Instant Pot and arrange carrots inside.
Close the Instant Pot lid, set the valve on “sealing”, and cook on high pressure for 2 minutes. Perform quick manual release, remove the lid and drain the carrots.
Add pot back with the carrots. Turn the instant pot on “saute” settings, add ghee, butter, or oil plus the seasoning and cook 2-3 minutes.

I tend to shy away from most grocery store sold cajun spice mixes. Most of them are extra salty. The ones sold at specialty spice shops are so much better. I usually make my own cause it’s easy and most of the ingredients are typical spice cabinet items. Just mix paprika, cayenne, garlic powder, onion powder, and dried thyme.Saute time will depend on how thick you cut the carrots. I like mine with a little chew to them, vs. super soft carrots. The goal with sautéing is just to add flavor you get from the butter and spices.I like to serve these immediately so cook them last.These are great side dish paired with other sides like mashed potatoes or smothered green beans. Serve these with a main dish like meatloaf, piri piri chicken, or blackened pork chops.
