Place the ground chicken in a large mixing bowl. Add ¼ cup of the panko, plus the egg, 1 tablespoon harissa, and seasonings. Mix well and set aside.
Divide the mixture in 3-4 parts depending how large you want the patties.
Form patties with each and gently roll in the reserved panic bread crumbs until well coated. Add additional crumbs as needed or desired. Set aside.
Preheat air fryer to 400 degrees F.
Add the patties and cook 4-5 minutes per side depending on thickness of the patties.
Make the Sauce
Mix the mayo, tahini, harissa, and chutney in a medium mixing bowl. Add water and mix in enough until desired consistency is achieved. I went for ketchup level consistency. Set the sauce aside until ready to dress the chicken sandwich.
Assemble the Chicken Sandwiches.
Spread sauce on the bottom bun.
Layer the chicken Patty on top then add the pickles and arugula.

Aim to make the patties roughly the same size/thickness and try not to make them too thick or they won't cook through properly.Allow the ground chicken to come to room temperature before cooking. This ensures even cooking throughout the patties.Spray your hands with cooking spray to prevent the ground chicken from sticking to your hands during the shaping of the pattiesDepending on how many patties you decide to make you'll need to cook one or two at a time. Keep the cooked patties warm (180 degrees F) in the oven while you finish cooking the others.Top your sandwich according to your preferences. I like simple pickles and arugula. But pickled red onions would be great as well as a nice collard greens slaw.The sauce is everything! Use it for a lot of things including as a dip for grilled okra, topping for fish sandwiches, or sauce for grilled veal chopsPair this sandwich with homemade fries, microwave corn on the cob, or smashed cucumber salad.
