Ingredients

Russet Potatoes
peeled and sliced thinly

Corn Starch

Cajun Seasoning
Store bought or homemade
Instructions
Preheat deep fryer to 300 degrees
Cut fries into long thin strips
Soak in a bowl of iced water for 30 minutes or so.
Drain and dry the cut fries thoroughly.
Toss fries in 2 tablespoon corn starch plus half the seasoning mix.
Lay dried fries on a parchment sheet lined sheet pan and let sit 20 minutes.
Fry at 300 degrees F for 4 minutes.
Remove and let sit for 10 minutes.
Increase heat to 375 degrees.
Fry again for 2-5 minutes depending on desired crispness.
Season immediately with remaining cajun seasoning.
Notes
Soak cut potatoes in cold water for at least 30 minutes to remove excess starch—this helps the fries fry up extra crispy.
Double-fry for crunch: first at
300°F
to cook through, then again at
375°F
to get that golden, crispy exterior.
Toss fries immediately with a Cajun spice blend while still hot so the seasoning sticks.
For a lighter option, you can bake or air-fry—just coat the fries with a little oil and Cajun seasoning before cooking
