Fried Cajun French Fries

Golden fried Cajun French fries tossed in bold spices—crispy outside, fluffy inside, and packed with zesty flavor for the ultimate snack or side.

Ingredients

  • 2 lbs Russet Potatoes peeled and sliced thinly
  • 2 tablespoon Corn Starch
  • 2 tablespoon Cajun Seasoning Store bought or homemade

Instructions

  • Preheat deep fryer to 300 degrees
  • Cut fries into long thin strips

  • Soak in a bowl of iced water for 30 minutes or so.

  • Drain and dry the cut fries thoroughly.

  • Toss fries in 2 tablespoon corn starch plus half the seasoning mix.
  • Lay dried fries on a parchment sheet lined sheet pan and let sit 20 minutes.
  • Fry at 300 degrees F for 4 minutes.
  • Remove and let sit for 10 minutes.
  • Increase heat to 375 degrees.
  • Fry again for 2-5 minutes depending on desired crispness.
  • Season immediately with remaining cajun seasoning.

Notes

  • Soak cut potatoes in cold water for at least 30 minutes to remove excess starch—this helps the fries fry up extra crispy.
  • Double-fry for crunch: first at 300°F to cook through, then again at 375°F to get that golden, crispy exterior.
  • Toss fries immediately with a Cajun spice blend while still hot so the seasoning sticks.
  • For a lighter option, you can bake or air-fry—just coat the fries with a little oil and Cajun seasoning before cooking
