Sweet Potato Waffles

Light, fluffy sweet potato waffles made with sweet potato puree, baking powder, and warm spices—crispy on the outside, tender inside, and perfect with maple syrup.

Ingredients

  • ½ cup unsalted melted butter
  • 1 ½ cup flour
  • 2 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 2 large eggs lightly beaten
  • 1 cup buttermilk
  • ½ cup pureed sweet potatoes

For the Syrup

  • ¼ cup maple syrup
  • 1 tablespoon hot sauce
  • 1 cup Canned Peaches
  • ¼ cup Canned Peach syrup

Instructions

  • Mix dry ingredients in a large mixing bowl.
  • Mix eggs, buttermilk, vanilla extract, butter, and sweet potatoes together in a separate mixing bowl.
  • Combine the two gently.
  • Heat your waffle iron and then spray the grills with non stick spray.
  • Pour in the batter and cook according to waffle maker instructions.

For the Syrup

  • Add all the ingredients in a medium saucepan. Simmer for 15 minutes until reduced and thickened. Let cool

Notes

Feel free to use canned pureed mashed sweet potatoes. Otherwise make your own either boiling or roasting diced sweet potatoes and pureeing them in a food processor.
Season as you prefer. Warm spices like cinnamon and nutmeg work well but certainly if seasonal you can go pumpkin pie spice.
Cook your waffles longer for more of a crispy texture.
