Air Fryer Lamb Chops with Pomegranate Chimichurri Sauce
Make tender, juicy air fryer lamb chops topped with vibrant pomegranate chimichurri. This easy recipe delivers crispy edges and bold herb flavor in under 30 minutes.
Season lamb chops with salt and pepper. Place chops in large ziplock bag.
Add the green seasoning to the lamb and massage well to ensure all the chops are coated. Refrigerate and and marinate at least 4 hours, preferably overnight.
Preheat air fryer to 400 degrees F.
Add half the chops and cook for 8-10 minutes depending on thickness of the chops. Remove the chops and repeat for the remaining chops.
If you prefer a more browned, caramelized exterior broil in oven on top rack for 1 minutes.
While chops cook in air fryer prepare the chimichurri sauce. Add the pomegranate seeds to the sauce and mix well. Set aside.
Top finished lab chops with the pomegranate chimichurri sauce.
Notes
For more browing on the exterior, pat the lamb dry and broil in your oven for a minute.
Pull chops slightly before target temperature achieved and let carryover cooking finish the job to avoid overcooking
Cook in batches if needed as you don't want to overcrowd the pan when cooking. Cooking too many at one time leads to too much moisture impacting texture.
