Ingredients
- 8 lamb rib chops
- 2 cups Green Seasoning
- 1 cup pomegranate seeds
- 1 cup chimichurri sauce
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
Method
- Season lamb chops with salt and pepper. Place chops in large ziplock bag.
- Add the green seasoning to the lamb and massage well to ensure all the chops are coated. Refrigerate and and marinate at least 4 hours, preferably overnight.
- Preheat air fryer to 400 degrees F.
- Add half the chops and cook for 8-10 minutes depending on thickness of the chops. Remove the chops and repeat for the remaining chops.
- If you prefer a more browned, caramelized exterior broil in oven on top rack for 1 minutes.
- While chops cook in air fryer prepare the chimichurri sauce. Add the pomegranate seeds to the sauce and mix well. Set aside.
