How I Make Homemade Lavender Lemonade

After a lot of testing, I landed on a two-syrup method that produces a much deeper lavender flavor than most lavender lemonade recipes. Instead of relying on a single infusion, I combine two different lavender syrups that each contribute something unique to the finished drink.

The first syrup starts with culinary lavender buds and fresh lemon zest. I add both to a bowl with sugar and muddle them together until the sugar becomes fragrant and slightly damp from the released oils. This step extracts floral oils from the lavender and bright citrus oils from the zest, creating an intensely aromatic base. I then add water and gently heat the mixture until the sugar dissolves.

At the same time, I make a second, more traditional lavender simple syrup by simmering sugar, water, and additional lavender flowers together. Once the sugar dissolves, I remove it from the heat and allow the lavender to steep. This syrup contributes the sweet floral backbone that gives homemade lavender lemonade its signature flavor.

I strain both syrups and combine them. The muddled syrup delivers fresh, vibrant lavender and citrus aromatics, while the traditional syrup adds deeper floral sweetness. Together they create a layered lavender flavor that is stronger, cleaner, and more complex than either method alone.

While the syrup cools, I juice fresh lemons. Fresh lemon juice is essential because its bright acidity balances the concentrated floral notes. One common mistake is using too much lavender and not enough lemon. If the lemonade starts tasting perfumy, add more lemon juice rather than more water.

To finish, I combine the blended lavender syrup with fresh lemon juice and cold water, then chill everything thoroughly. For the best texture, I serve the lavender lemonade over crushed ice with fresh lemon slices and a sprig of lavender. The result is a floral lemonade with bold lavender character, bright citrus flavor, and a silky, refreshing finish that holds its own on the hottest summer days.

Ingredients

  • 10 full heads of lavender flowers stems trimmed
  • 1 ¼ cups granulated sugar
  • 1 cup freshly squeezed lemon juice from 6 to 8 lemons
  • Lavender sprigs for serving

Method

  1. In a medium saucepan, combine half the lavender flowers, 1 cup sugar, and 1 cup water. Bring to a boil, adjust the heat, and simmer for 1 minute. Turn off the heat, put a lid on the saucepan, and let the syrup cool for 10 minutes. Pour through a fine mesh sieve into a heatproof container and refrigerate until cold.
  2. Place lemon peels in a medium bowl. Add ¼ cup sugar, plus remaining lavender. Muddle the ingredients using a bar muddler or the end of a wooden spoon.
  3. Let the mixture rest a few hours, but preferably overnights so the sugar can absorb the oils from the zest and the flowers.
  4. Add 1 cup warm water to the mix. Stir until sugar is dissolved, then strain. Allow to cool.
  5. Combine lemon zest syrup with 1 cup lemon juice, ½ cup of lavender syrup and 4 cups of cold water. Mix well in a tall pitcher and refrigerate.
  6. Serve over ice garnished with fresh lavender.
