This oven fried chicken brings Southern fried chicken energy without the deep fryer: juicy, well-seasoned chicken wrapped in a wildly crunchy crust of panko bread crumbs, pumpkin seeds, and nutty benne seeds. Cornstarch keeps the coating light and craggy while high-heat baking turns those seeds deeply toasted and aromatic. It’s fried chicken tradition remixed through an oven-frying technique built for maximum crunch with less oil.

For the full soul food plate, serve this crispy oven fried chicken with Southern collard greens, where the tender, smoky greens offer the perfect counterpoint to that crunchy seed crust. Creamy mac and cheese, Southern style black-eyed peas, cabbage, or cornbread would all be right at home next to it too.

Key Ingredient Notes

Cornstarch - is one of my keys to crisp oven fried chicken. Mixed into the breading, it reduces the heavy floury quality you sometimes get with baked chicken and helps create a lighter, brittle crunch. Potato starch makes an excellent substitute and can produce an even more delicate crust.

Pumpkin Seeds - or pepitas, bring the serious crunch. Their earthy, slightly sweet nuttiness becomes more pronounced as they toast in the oven. Look for unsalted pepitas in the bulk section, baking aisle, or Latin American section of larger grocery stores. Sunflower seeds are my first substitute.

Benne Seeds - bring history as well as flavor. Deeply connected to African American and Lowcountry cooking traditions, benne has a richer, more pronounced nuttiness than the standard sesame seeds most people know. Specialty Southern food retailers are your best bet for true heirloom benne seeds. Regular sesame seeds work when benne isn't available, though the flavor will be milder.

Panko Bread Crumbs - gives this oven baked fried chicken its big, airy crunch. Those larger flakes create more surface area than traditional bread crumbs, which means more crispy edges once the chicken hits the heat. Regular bread crumbs work in a pinch, but they produce a finer, denser coating.

How I Make Crispy Oven Fried Chicken

  • I start with dry chicken. That's more important than people think. Excess surface moisture works against browning and makes breading slide off instead of grabbing the meat.
  • I season the chicken itself first. I never rely on the breading to do all the work because once you bite through that crunchy coating, the meat still needs to taste like something.

  • Then I coat the chicken in seasoned corn starch mix, covering all parts before dipping it into the seasoned egg wash.

  • Next I build the crunchy coating with panko bread crumbs, crushed pumpkin seeds, benne seeds, cornstarch, and seasoning. I don't grind the pumpkin seeds into dust. I want different-sized pieces because that irregularity creates texture. Some pieces toast hard and crunchy while smaller bits settle into the panko.
  • I coat the seasoned chicken thoroughly, pressing the pumpkin seed-panko mixture firmly against the surface. Don't just roll the chicken around and hope for the best. Press that breading in.

  • For the best oven fried chicken texture, I heat the sheet pan first, then put the breaded chicken directly against a melted butter coated flat pan.
  • Before baking, I lightly coat the breading with oil. The operative word is lightly. Too little oil and the panko stays pale and dry. Too much and you lose the clean, crunchy texture we're chasing.
  • I bake at high heat until the coating is deeply golden, the seeds smell toasted, and the chicken reaches a safe internal temperature.
  • Then I leave it alone for a few minutes.
  • That last rest matters. Cutting immediately releases juices that should stay inside the chicken. Give the meat a minute and you'll get the contrast we're after: juicy chicken underneath and a dry, crackling seed crust outside.
  • Optionally add a finishing touch like hot honey sauce.

  • Season in layers. Season the chicken and the panko mixture separately so every bite has flavor.

  • Prep the breading ahead: The pumpkin seed, benne seed, panko, cornstarch, and dry seasoning mixture can be combined ahead and stored airtight.
  • Don't bread too early: For maximum crunch, coat the chicken shortly before baking rather than letting wet breading sit overnight.

The Listening Experience

This oven fried chicken sounds like Sade’s “Keep Looking”: smooth at its core, but driven by a crisp, persistent groove. The panko is the rhythm section, creating an airy crackle, while pumpkin seeds hit like percussion with bigger pops of crunch. Toasted benne seeds play the bass line, adding deeper, nutty notes underneath.

Skip the deep fryer. This easy oven fried chicken stays juicy inside with a crispy, crunchy panko and seed crust packed with toasted, nutty flavor.

Ingredients

  • 4 chicken breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dry thyme
  • ¼ cup pumpkin seeds
  • 2 tablespoon benne seeds
  • ½ cup panko breadcrumbs
  • 1 cup corn starch
  • 2 large eggs
  • 2 tablespoon unsalted butter
  • Cooking spray

Method

  1. Pound each breast flat so chicken thickness is even all across the breasts.
  2. Preheat oven to 425 degrees F. Butter a baking sheet and place in the oven for 5 minutes.
  3. Mix together the dry spices. Set aside.
  4. Place corn starch in wide mixing bowl. Season it with spice mix (½ tsp).
  5. Place eggs in mixing bowl and beat. Season the wash with more of the spice mix (½ tsp). Set aside.
  6. Using a spice grinder to coarsely grind the pumpkin seeds. Alternatively you can place in a plastic bag and pound them with the flat side of a heavy bottom skillet.
  7. In another mixing bowl, mix the crushed pumpin seeds with benne (sesame) seeds, and panko bread crumbs. Add ½ teaspoon of the spice mix.
  8. Season the chicken with the rest of the spice mix. Coat the chicken with the corn starch mix.
  9. Dip chicken into egg wash. Coat it generously in the bread crumb mixture pressing the crumbs into the chicken.
  10. Add chicken to the heated pan and spray the top of the chicken with cooking spray. Bake for 20 minutes, flipping half way.
