I've tested and mixed many different spices to create a balanced and delicious spice rub. After my tests I found that a few spices make the most impact. The smoked paprika hums the bassline, coriander brings the citrusy funk, garlic powder whispers that earthy truth, sugar balances the heat, and sea salt ties it all together like that Bobby Sessions track—“Grateful” on the speakers while these fries crisp up feels like self-love in stereo.

Can’t find purple sweet potatoes? Sub in Japanese satsumaimo, regular orange sweet potato, or even jewel yams—they still hit different.

Crispy Oven-Roasted Purple Fries

Ingredients

  • 1 lb purple potatoes unpeeled and cut into wedges
  • 2 ½ tablespoon olive oil
  • 1 ½ teaspoon sea salt
  • 1 teaspoon sugar
  • 2 teaspoon smoked sweet paprika
  • ½ teaspoon black pepper
  • ½ teaspoon ground garlic
  • ½ teaspoon coriander
  • 2 tablespoon potato starch or cornstarch optional for more crispy fries

Instructions

  • Heat oven to 400°F. Cut the potatoes evenly in strips or wedges.

  • Pre-Cook the Potatoes by boiling in salted water

  • Drain the potato fries well

  • Place potatoes, starch, and ½ teaspoon of the salt in a mixing bowl and toss. If not using starch, just exclude and go to next step.

  • Transfer to a baking sheet: Spread the coated potatoes out into a single layer on an ungreased baking sheet. Roast 15 minutes then flip and roast another 5 to 10 minutes until potatoes develop crispy exterior.

  • While potatoes are roasting, combine spice ingredients including the sugar mixing well.
  • Once potatoes are done, allow to cool a few minutes then season and serve.

This recipe works for other potatoes as well including sweet potatoes and plain white potatoes

When to add the sugar?

Thesugar is part of the seasoning mix. I combine all the seasoning in one small bowl and season the fries after cooking.

This worked wonderfully for me. I did put up the oven temp to 425 for a extra crisp, and just kept an eye on them!!!
