Crispy Air Fryer Chicken Wings Ingredient Notes

Bread Coating

Cornstarch is the secret weapon for extra crispy wings. It absorbs surface moisture and creates a thin, brittle coating that fries up light, crunchy, and golden in the air fryer. Potato starch is an excellent substitute and delivers similarly crisp results.

Panko breadcrumbs add a coarse, airy texture that creates larger crunchy pockets than traditional breadcrumbs. Their light structure helps the coating stay crisp while giving the wings an irresistible crackly bite. For the best texture, avoid finely ground breadcrumbs, which can create a denser crust.

Eggs act as the binder that helps the seasoned cornstarch and panko adhere evenly to the chicken. They also contribute a little richness while ensuring the coating stays intact during cooking.

How To Make Crispy Wings Without Deep Frying

Wash and dry the chicken with paper towels. Set aside and allow to reach room temperature.

Mix the chicken dry rub ingredients together in a small bowl or ramekin.

Season the chicken with ¼-1/2 the spice mix. Place chicken in a large bowl and add the potato starch. Shake to coat the individual wings well.

Create a dredge set up with three separate bowls - one for the starch, one for the beaten egg, and one for the bread crumbs. Feel free to season each with the dry rub mix.

Dredge the wings in the starch, then dip into egg wash. Finally cover the wings in the panko breadcrumb coating and place wings on wire rack until ready to fry.

Spread wings out on a baking sheet and let them air dry (preferably uncovered) in the fridge (about 30 minutes).

Remove the wings. Brush with oil (strictly for sticking purposes) and sprinkle each with the remaining spices.

Tips and Considerations For Breaded Chicken Wings

Corn or tapioca starches are perfect substitutes to potato starch. Starches work great as a coating because they don’t contain gluten which results in lighter and crunchier skin.

Season the wings before and after cooking with the dry rub.

This recipe is compatible with any spice mix so don’t fret if you don’t have all the ingredients on hand or if you just have a personal chicken wing dry recipe you prefer.

Time permitting dredge the wings in the starch and air dry them in your refrigerator for at least 30 minutes. This helps to create that crunchy skin that sticks to the wings vs. a crust that falls completely apart when you bite into it.

Absolutely do not crowd the air fryer pan. Create as much space between each wing as possible. Cook in batches if needed. By maintaining space you help aid the circulating heat in the fryer reach all parts of the wings.

Beats and Eats (music to pair with Crispy Air Fried Wings)

These crispy air fryer chicken wings pair perfectly with Buddy's "Shameless." The song's laid back West Coast bounce and confident groove mirror the contrast in the wings themselves: crunchy, bold, and impossible to ignore. Just like Buddy rides the beat with effortless swagger, the cornstarch and panko coating delivers a crisp texture that feels both easygoing and attention grabbing.

The track's warm bass lines and sun soaked production complement the savory richness of the chicken, while its playful energy makes every bite feel like part of a backyard kickback or game day gathering. This is the kind of pairing that encourages you to stop counting wings and simply enjoy the moment, completely shamelessly.

Whether you're serving them as game day wings, for a family gathering, or a weeknight craving, these crispy air fryer chicken wings prove that big crunch, bold flavor, and juicy texture are always worth celebrating.
