How To Cook Brats in an Air Fryer
I've cooked bratwurst every way imaginable, and the air fryer has earned a permanent spot in my rotation because it consistently delivers juicy interiors and beautifully blistered casings with almost no effort. I cook the air fryer bratwurst at a high temperature (350 degrees F), flipping halfway through so both sides brown evenly. I don't pierce the sausages because that releases the flavorful juices that keep every bite tender.
While the brats cook, I make my grainy mustard harissa sauce by whisking together whole grain mustard, harissa, a touch of honey, and dijon. The mustard adds texture, the harissa brings smoky chile flavor, and the honey rounds everything out without making the sauce sweet. It's the finishing touch that makes these crispy air fryer brats stand apart.
The biggest mistake is overcooking. Brats continue cooking for a few minutes after leaving the air fryer, so I pull them once they reach 160°F and let carryover heat finish the job. Another common mistake is crowding the basket. Leave space between each sausage so hot air circulates and develops that signature browned exterior.
For even more flavor, toast the buns, caramelize onions until deeply golden, and spoon plenty of the mustard harissa sauce over each brat. Finish with fresh herbs or crunchy pickles for contrast. I cooked four tasty brats in my air fryer oven. One package of brats is more than enough for my household. Be mindful of the size of your air fryer. You don't want to overcrowd the basket, so strive to add the brats in a single layer.
If you want extra flavor, try marinating the brats in beer (for beer brats)
When air frying brats, be sure to rotate them halfway through cooking for even browning and nice crisp skin on all sides.
For juicy brats don't overcook these. Longer cooking time can cause brats to burst and lose much of their moisture and crispy skin.

Crispy Air Fryer Brats with Harissa Mustard Sauce
Ingredients
- 4 Bratwurst sausages
- 1 tablespoon Grainy Mustard
- 1 tablespoon Harissa Sauce
- 2 tablespoon Dijon Mustard
- 1 teaspoon Honey
- 4 Hot Dog Buns optional
Method
- Pre-heat air fryer to 350 degrees F.
- Add the uncooked brats and cook for 7 minutes. Rotate the brats about halfway through cooking.
- While the brats are cooking make the sauce. Mix together the dijon, grainy mustard, harissa sauce, and honey in a medium bowl. Set aside.
- After the brats are done, remove and set aside. If making 'hot dogs' add the buns and cook for 1 minute.
