  • Dried Lemon Zest: The star of the show — adds that sunny citrus tang and aromatic brightness that keeps every bite lively.
  • Black Peppercorn: Brings bold heat and a slightly floral bite that balances the lemon’s sharpness.
  • Garlic Powder: Adds savory depth and undertones that round out the mix.
  • Onion Powder: Softens the edges with gentle sweetness and a chill vibe aroma.
  • Dried Thyme: Infuses a subtle earthiness and herbal note, giving the blend a refined, Southern soul finish.

Beats and Eats (music to pair with your own lemon pepper seasoning)

Now, this one’s got vibe written all over it. “Dukey Stick” is funky, electric, and smooth — just like this lemon pepper mix. The track’s groove mirrors the seasoning’s energy — zesty highs from the lemon zest, deep bass from the black pepper, and a touch of sweet rhythm from the garlic and onion. Both are confident, upbeat, and designed to make anything — or anyone — move with flavor.

Test Kitchen Secrets to Making It Great:

  • Use fresh lemon zest for the most vibrant citrus aroma and punch.
  • Toast your peppercorns lightly before grinding to release deeper flavor.
  • Use a spice grinder for your dried lemon peel and peppercorns.
  • Balance the ratio — too much lemon can overpower; too little and you lose the sparkle.
  • Store in an airtight container (jar) to keep it crisp and aromatic for weeks.

Ingredients

  • 5 large lemons
  • ¼ cup black peppercorns
  • 2 teaspoon coarse salt
  • ¼ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • teaspoon onion powder

Method

  1. Peel lemons with vegetable peeler. Leave as much of the white part on the lemon as possible.
  2. Line peels on a sheet or baking pan.
  3. Preheat your oven to its lowest temperature. This is usually between 180° and 200° Fahrenheit.
  4. Bake in the oven and allow the spices to dry for 30-45 minutes. Check it every10-15 minutes and turn the baking sheet to avoid some areas drying much faster than others.
  5. Add lemon peels, peppercorns, and kosher salt to spice grinder. Blend until it's a preferred grind. Mix in thyme, onion and garlic powder.
  6. Store in an airtight container in a cool dark cabinet.
