Golden, flavor-forward, weeknight-ready seafood with crispy edges and coastal soul
This fried fish sandwich recipe is a modern change-up to classic fried catfish sandwich. Thicker mahi mahi is substituted and the fish is pan-fried with a light crust.
This sandwich hits that sweet spot between crispy and clean-lightly crusted fish with a buttery sear, tucked into a soft bun with bold, bright toppings. It nods to the comfort of a traditional fried fish sandwich but skips the heavy batter and deep fryer, giving you a fresher, faster, flavor-forward bite.
Perfect for busy nights when you want something soulful, satisfying, and just a little elevated.

What Makes This Sandwich Different
Traditional fried fish sandwiches lean hard on deep frying - thick batter, heavy oil, and that greasy indulgence. This version flips the script:
- Pan-fried, not deep-fried ? less oil, cleaner flavor
- Light crust vs. heavy batter ? lets the mahi mahi shine
- Faster cook time ? weeknight-friendly, no fryer required
- Flavor layering ? seasoning + toppings do the heavy lifting, not just crunch
This ain’t fast food-it’s fast flavor.

How to Make Pan Fried Mahi Mahi Fish Sandwich
- Season and prep the fish
Pat mahi mahi dry and season generously with salt, pepper, and spices. - Dredge lightly
Coat in a seasoned cornmeal-flour mix—keep it light, not thick. - Pan fry
Heat oil in a skillet and cook fillets 3–4 minutes per side until golden and cooked through. - Toast the buns
Butter and toast buns in the same pan for extra flavor. - Build the sandwich
Layer fish, sauce, and toppings. Close it up and enjoy!
Marwin's Test Kitchen Tips
- Don’t overcrowd the pan; give the fish space to crisp up
- Medium-high heat is key: too low = soggy crust, too high = burnt exterior
- Press lightly with a spatula for even browning
- Let the fish rest briefly before assembling to keep juices locked in
- Top with your favorite toppings. I used a homemade buffalo sauce with blue cheese sauce and chow chow. Tartar sauce more than does the job.
Ingredient Substitutions and Variations
- Swap mahi mahi with snapper, cod, or catfish
- Use a cabbage slaw for extra crunch
- Add a slice of cheese for a Southern diner vibe
- Go spicy with hot honey drizzle or chili crisp mayo
What to Serve With This Sandwich
- Pair it with crispy cajun fries or Southern fried corn for that cookout feel. Chimichurri potato salad is also a good look.
- Add a napa cabbage slaw for balance and crunch
- Wash it all down with a refreshing and creamy Brazilian lemonade.
- Enjoy grilled shrimp as an appetizer beofe the main dish!
