This grilled vegetable salad layers smoky char, bright citrus, and fresh herbs into a dish that's as satisfying as it is vibrant. Inspired by Mediterranean and backyard grilling traditions, caramelized zucchini, peppers, onions, asparagus, and fresh peaches deliver tender-crisp texture while a lively citrus herb dressing cuts through the smoky richness. It's equally at home beside grilled pork chops or cedar plank smoked trout.

Summertime is the best! You can't beat the wide selection of fruits and vegetables available for your pleasure. I made use of as many as I could in this grilled vegetable salad.

This salad recipe came together rather easily. I just chose fresh, hearty vegetables I had a available at the time and grilled them over high heat. Grill + veggies are a love match made in heaven.

Recipe Notes

This grilled vegetable salad is flexible enough to follow the seasons. Zucchini, peaches, asparagus, sweet peppers, all grill beautifully. Try to cut everything into similar thicknesses so they cook evenly while developing attractive grill marks.

The citrus herb dressing is what separates this recipe from an ordinary grilled vegetable side. Fresh lemons provide sweetness and acidity while herbs add freshness that balances the vegetables' smoky depth.

I chose vegetables like zucchini, eggplant, peppers, corn on the cob, asparagus, and tomatoes; these were all ones I knew would stand up to the blistering heat from direct grilling. I added peaches for contrasting sweetness and tartness.

Finish with crumbled feta, toasted pistachios, pumpkin seeds, or shaved Parmesan for extra texture. Leftovers become even more flavorful overnight and are excellent tucked into sandwiches, folded into pasta, or spooned over grains.

How I Make This Grilled Vegetable Salad

I treat every vegetable a little differently because they don't all cook at the same pace. I lightly coat the vegetables with olive oil, season generously, and grill them over high heat just long enough to build deep grill marks while keeping some bite. Mushy vegetables are the fastest way to lose what makes this grilled vegetable salad special, so I always pull them before they become soft.

Once everything cools slightly, I toss the vegetables while they're still slightly warm with my citrus herb dressing. That's the secret. Warm vegetables absorb the vinaigrette far better than cold ones, allowing it to season every bite instead of simply coating the surface.

If the vegetables seem flat, it's usually because they needed another pinch of salt or a squeeze of fresh citrus rather than more dressing. I also avoid overcrowding the grill, which steams the vegetables instead of creating the smoky caramelization that defines a great grilled vegetable salad.

Additional Tips

  • Make sure your grill is hot so pre-heat and give it time
  • Choose firm vegetables and fruit that will stand up to the high heat
  • Use a vegetable tray sprayed with non-stick spray.
  • Grilled the vegetables whole vs chopping them. This prevents them from burning as well as falling through any cracks

Serving Suggestions

This salad makes an excellent pairing with any grilled meats or vegetables for a vegan bbq. I enjoy it as a side to my chimichurri steak as well as with these smoked awaze ribs.

Beats and Eats (music to pair with grilled vegetables)

Prince's "When 2 R in Love" moves with the same effortless elegance as this grilled vegetable salad. Its lush harmonies, gentle melodies, and intimate phrasing mirror the way smoky char melts into the bright citrus herb dressing, while every fresh herb and crisp-tender vegetable feels like another layer in the song's rich, romantic arrangement.

Fire, freshness, and vibrant seasonal produce prove that vegetables can command the center of the table with every smoky, citrus-kissed bite.
