This calamari steak with corn salsa is a bright, coastal-inspired dish that delivers tender seafood, smoky char, and juicy summer sweetness in every bite. Quick-seared calamari steak provides a meaty yet delicate texture, while a vibrant corn salsa packed with okra, cherry tomatoes, and nectarines brings crunch, freshness, and sweet-tart balance. It's a modern take on seafood and produce at their seasonal peak, perfect served with flavorful jollof rice and crunchy smashed cucumber salad.

I also like to pair this with coconut prawn curry for full seafood vibe.

How To Make Squid Steak with Corn Salsa

When cooking calamari steak, my biggest goal is preserving tenderness. Overcooked squid becomes rubbery fast, so I always start by patting the calamari steaks dry before seasoning them. A hot grill or cast iron skillet is non-negotiable. I cook the calamari steak just 2 to 3 minutes per side until lightly charred and opaque.

For the corn salsa, I like to char fresh sweet corn first because it adds smoky depth that complements the seafood. I combine the corn kernels with sliced okra, halved cherry tomatoes, diced nectarines, fresh herbs, lime juice, and a touch of olive oil. The combination creates layers of texture with crisp corn, tender-crisp okra, juicy tomatoes, and silky nectarines.

One mistake I see often is overcrowding the pan when cooking calamari steak. Give each steak room so it sears instead of steams. Another common issue is under-seasoning the salsa. Taste as you go and don't be shy with citrus, salt, or herbs. For even more flavor, finish the dish with flaky sea salt, grilled lemon halves, or a drizzle of herb oil.

I serve the calamari steak immediately topped with plenty of corn salsa so the contrast between the warm seafood and cool salsa stays front and center.

Notes To The Cook

Fresh sweet corn provides crunch, sweetness, and smoky flavor when grilled. Look for tight green husks and plump kernels. Frozen fire-roasted corn works when fresh corn is unavailable.

Okra contributes a pleasant snap and earthy flavor that bridges the seafood and summer produce. Choose small, firm pods with no soft spots. Quick blanching reduces any excess mucilage while preserving texture.

Cherry tomatoes bring acidity, juiciness, and color. Seek out deeply colored tomatoes that feel heavy for their size. Grape tomatoes make an easy substitute.

Nectarines add sweetness and a silky texture that balances the briny calamari steak. Use fruit that yields slightly to pressure but isn't soft. Peaches work equally well.

Ways To Make It Better

Grill the corn and nectarines for additional caramelization. Add diced avocado for richness or fresh jalapeño for heat. A spoonful of citrus zest brightens the entire corn salsa.

Squid Steaks Recipe Meal Prep Tips

Prepare the corn salsa up to a day ahead and store chilled. Cook the calamari fillets just before serving for the best texture.

Where To Find Calamari

Most seafood counters carry calamari steaks frozen or fresh.
