Simple and quick carrot salad that’s the perfect side salad that can be made ahead for easy weeknight dinner option.
Carrots are shredded into ribbons using a vegetable peeler and served with homemade buttermilk ranch dressing.

- Fresh carrots
- Buttermilk Ranch Dressing

There are no real cooking instructions. Just peel the carrots and make the dressing unless you’re using store-bought.
COOKING CONSIDERATIONS & TIPS
Use a vegetable peeler, mandolin, or sharp knife to shred the carrots. Peeler and mandolin are the ways to go, as they cut down time and be more efficient
Choose the freshest carrots you can find for a true carrot taste.
Do your shredding ahead of time and store in a ziplock back, then just serve with your dressing when you’re ready.
The homemade buttermilk dressing is worth the time. It’s flavorful and a great compliment to the salad.
Feel free to add more ingredients for a more traditional carrot salad recipe. I’m not a raisins in my salad kinda guy, but if that’s your thing go ahead and rock that along with apples.
